Recipe: Banana Ice Cream

Run through juicer w/ proper attachment for ice cream. A high speed/power blender will do the same thing.

Tomatoes
Salt/Pepper
Italian Seasoning
optional: oil, lettuce, cucumber

Equipment: Pannini Grill

Slice Zucchini & Yellow Squash, grill & put aside
Slice open avocado & mash. Spread the avocado onto the bread

Recipe: Vegan Mac n "Cheese"

the healthiest "mac n cheese" ever

pasta - any kind
coconut milk
butternut squash, chopped

all below are optional
zucchini &/or yellow squash, chopped
turmeric
fenugreek
parsley flakes
rosemary
coriander
salt, pepper
nutritional yeast
-any other seasonings

Put coconut milk in large sauce pan w/ all ingredients except pasta. At the same time boil water for pasta.
Cook sauce partly covered on low-med heat, until butternut squash is soft. Drain pasta, add sauce to pasta & serve.

Notes:
-if the coconut milk is getting too thick add water, soy milk or rice milk.
-if using zucchini or yellow squash, add it to sauce when you put the pasta to cook, it cooks up quicker than butternut squash
-Blending the cooked sauce w/ a hand blender will make the dish more cheese & creamy
-nutritional yeast has a cheesy flavor & can be sprinkled on upon serving
-these seasonings are what I typically use, but you can change them to what suits your taste
-the sauce will thicken when refrigerated, great reheated

Recipe: Vegan Pizza

Use a regular pizza dough & tomatoe sauce recipe - those are easy to make vegan. The topping is sometimes tricky, we found a great one that will have you wanting more!
Recipe
1 pizza dough: flour, water, yeast
tomatoe sauce: crushed or diced tomatoes, tomatoe paste, rosemary, oregano, thyme, parsely flakes.
topping: vegan cream chesse, shredded carrots, shredded zucchini, shredded yellow squash
Prepare pizza dough as you normally would (I usually just buy a pre-made dough at the local italian bakery)
Prepare sauce by mixing all the ingrediants together, spice, salt & pepper to taste
Prepare topping by shredding the vegetables, mix with cream chesse.
Roll out dough onto a baking sheet or pizza pan, pour on sauce, spread on topping & bake.
I typically add nutritional yeast after it is done, it adds a more cheesy taste.

Recipe of the day - Quick, Simple, Tasty

Carrot/apple salad

I love this, especially on a nice bed of greens, or with anything really. Chris grew up eating this, so it's surely a favorite in this house

Shred carrots
Shred Apples (or chop)
Dried Fruit (figs or raisins work best)
Optional - Lemon

Mix it all together, and let it sit for a bit, to allow the flavors to blend, or if u can't wait, just eat while mixing, lol

Enjoy
:)
